Latkes

6 potatoes
1 onion
garlic
2 eggs
60 g matzoh meal or flour
salt and pepper to taste

Peel and grate potatoes. Chop onion and garlic. Break the eggs, one at a time, and check if there's no blood in them. If there is, get the blood out (if it's only a small lump) or discard the egg. Beat the eggs.
Mix all ingredients in a large bowl.

Heat some olive oil in a frying pan. Spoon about one large tablespoon of the batter into the frying pan and flatten it a little with the back of the spoon. Fry for a few minutes, until golden brown, turn and fry the other side too.
You can fry four or five latkes at once in a large frying pan.

Serve hot with (sour) cream or yoghurt and apple sauce.

Enjoy!

Note: You could also add some chives and parsley to the batter.
Or add some 150 g. grated cheese to the mixture, to make Cheese latkes. These are our favorites.
